To talk about The Eyrie Vineyards is to talk about a founding winery of the Willamette Valley, with some of the most impeccable farming practices. The estate is certified biodynamic, as well as being mostly regenerative, and the wines have just become more intense and exciting over the years. The grapes are destemmed, and hand punch-downs are performed every 24 hours over three days before then the wine is aged in primarily neutral French oak for 18 months. The finished wine is light and ethereal with some hints of tobacco and red fruit, plus some classic forest floor and mushroom notes on the long silky finish.
