Cephelonia, in the Ionian Islands, is a spectacular place to grow white wine, and in particular Tsaousi. From ungrafted root stock that grows in perfect limestone soil this is what truly natural wine is, no irrigation, no chemicals, low yields, all hand harvested and all native yeast. Resulting in a soft, nuanced and incredibly drinkable white with hints of pear and soft salinity, you might even think of the Jura for a second.
