HORS CHAMPS 2021 'UNE VIE LA NUIT' COTES CATALANES

This is a wine that is near and dear to my heart and it feels like after a few vintages the wine has finally come to a great conclusion. Starting with a layer of Grenache and then adding whole cluster Syrah and allowing it to undergo full carbonic maceration, resulting in the deep brooding and spicy wine you want but with none of the pesky reduction or waiting for it to "settle down", it is drinkable right out of the bottle or after five years of aging.
