On the border of Slovenia, Gravner ferments this Ribolla in giant teracotta, sealed with beeswax, and then buried underground for many months as was done in ancient times. After pressing, it goes back underground for an additional 5 months. After which it is aged an additional six years in barrels. Tangerine, apricot, hazelnuts, honey, great acidity, salty finish. Bucket list wine!
