Fabrice Gass, the man behind the Filaine wines, is an iconoclast even for Champagne. From one parcel, that is planted to Pinot Noir, Pinot Meunier, and Chardonnay, he makes three cuvees, each one is aged in old barrels - often leftover from Bollinger where he worked for years - no malolactic fermentation and very little intervention.  The resulting wines are beautiful, complex and far too limited in supply.

Cuvee DMY is a true representation of old school, as in 100 years ago, winemaking in Champagne.  Aged under cork so it has a bit more soft round characteristics it is still beautifully aromatic right out of the bottle and as the night progresses, or the afternoon, it shows its notes of raspberry and hints of jasmine.
