Ugni Blanc aka Trebbiano, is grown all over France and primarily shows up in Cognac and Armagnac. When it is grown in the aromatic hills of Provence and then left to macerate for 21 days on it's own skins it really shines. Full of bright baked lemon curd, with some soft lush apricot and tons of lychee all tied up in a nice black tea bow. Drink it cold but not too cold with some fresh goat cheese.
