A terroir expression in every sense, this raw cider from Vermont aims to showcase its ecosystem of origin by utilizing wild-foraged apples fermented with native yeasts. After fermentation, the cider ages in a cave and is then bottled without fining or filtration to preserve the maximum aromatic and flavor compounds -- compounds that cascade from the glass, mixing vibrant apple, herb, and spice flavors all accented by tiny bubbles.
