Fleur de Passion is the crown jewel bottling from Diebolt-Vallois that is just like any other vintaged Champagne and only bottled in exceptional years. The winemaker also makes this cuvee the traditional way--fermented in barrels with malolactic fermentation, fining, filtering all avoid to preserve the essence of terroir. Then the wine is aged in Burgundy 1-wine barrels. All that leads to a dense, rich core of orchard fruit, a filigree of acidity with that wonderful chalky minerality shining adding a layer of texture.
