In order to maintain full control, the Sangiovese and Canaiolo grapes are fermented separately by vineyard and variety. Carefully blended, this Tuscan red shows that showcases the underlying wild character of Italy. It is deep and soulful. Juicy dark fruits come through bracketed by fresh savory herbs. The tannins are well-integrated and silky as a result from the gentle fermentation process. The obvious pairing is red sauce pasta but don't shy away from earthy sheep's milk cheeses or a steak salad.
