It immediately transports you to another world where everything is wonderful, the sun is shining, and the hills are alive with the sound of music. 30% comes from a perpetual reserve wine that Etienne keeps for this wine. It grounds the wine a bit but not enough to still keep it afloat and bubbly. It is laser sharp and steely and fine minerality. For the fruit component, salted lemons come to mind.
