SUORE CISTERCENSI 2020 'COENOBIUM RUSCUM' LAZIO BIANCO
After spending 14 days on the skins the wine undergoes malolactic fermentation and spends a year on the lees. Very minimal fining and filtering, with sulfur added at harvest and bottling in miniscule amounts. A sort of big brother to the normal Coenobium bottling it is full of texture and some notes of orange peel, ripe apricot and nice mineral edges. You have to love the nuns who make this.
