Fiano is one of my favorite white grapes from Italy, it deserves more attention than it gets. This delightful example is a great introduction to what Fiano can be. From organic vineyards the wine is fermented with native yeasts and then is allowed to age on the lees for 6-10 months giving it a soft and round texture and a touch of bright salinity. Think wild straw and beautiful acid with a hint of salt and smoke - always refreshing.
