BENOIT DEHU NV 'CUVEE DE L'ORME' EXTRA BRUT

From a tiny 1.5 hectare plot that was previously planted to Elm trees and is now all Pinot Noir, comes another stunning wine from Benoit Dehu. Fermented in used oak barrels, with no dosage, this is a red fruit laden textured wine, a little bit of reduction that will dissipate if you either decant (I know, who decants Champagne but you can do it) or you can pour small amounts and drink slowly and watch as the wine begins to open up more and more. You will be rewarded with a round wine, small bubbles and tons of length and spirit.
