This is the type of thoughtful, nuanced wine all Pinot Grigio aspires to be. It is made from vines that are nearly 30 years old, and the wine is fermented with native yeasts before aging in tanks for six months. During that time, the wine is stirred weekly to give it a smooth, creamy texture. Notes of citrus, fresh herbs, green grass, and lovely bits of minerality play together nicely in the glass. After tasting this wine, you probably won't order Pinot Grigio at Olive Garden ever again.
