Chinato is an elevated version of vermouth that is traditionally made with Barolo but in this case a base of Barbera is used, and quinine bark, resulting in a dark and brooding intense aperitif.  From the bright red fruit and the long and distinct bitterness on the palate to the finish this is the kind of drink you can't stop returning to. Drink it on the rocks or at room temperature or with a splash of gin, a squeeze of lemon and a dash of honey.
