Originally this was made as a more medicinal and even more bitter aperitif, but it has been perfectly toned down to be just about the most delicious improvement upon Sherry. Old Oloroso is macerated with some Pedro Ximinez and Quina Bark with licorice, and cinnnamon. It is at once deep and rich while being perfectly bitter, it needs a couple cubes of ice and a couple olives to make your late afternoon perfect.
