Made by the first every non-Japanese distiller in Japan, this is a "new" style of classic sake making. Using only ambient yeasts and coming from a house that prioritizes big bold flavors this is a beast of a sake in the best way, think of it as a "natural" sake. Starting with intense lush notes of blue cheese, hints of wood and tons of umami and mushroom all balanced by perfect acidity. Drink it warm or cold this is a sake for pairing with lush meat dishes and long evenings.
